This book was inspired by a recent period of living in Lakatoro, Vanuatu where I was reunited with the tropical foods I grew up with at my home in rural PNG.
The markets of the Pacific are full of affordable, nutritious organic foods, while store-bought food is often expensive and of dubious quality.
These are some of my favourite recipes, most of which hero market food. They include island-style dishes from Melanesia as well as those with an Asian or Western influence.
Not all these recipes are my own, some have been provided by friends and others I have adapted from other cookbooks.
